A salted egg yolk craze has gripped Singapore in the last few years with little sign of abating. Everywhere you turn a food outlet is offering something oozing, coated, dusted, or blended with salted egg yolks. This is a craze I’m more than happy to abet, and one of my favorite finds is salted egg yolk potato chips. The Golden Duck makes a delicious version with thin potato crisps and a sweet and savory salted egg yolk coating with bits of laksa leaves. If you want your crunch with more heft, try their salted egg yolk fish skin crisps.
